To serve our meat processor customers better, we've brought Austrian experts to the USA to train our main slaughterhouse, Swiss Meat and Sausage Company, in Mangalitsa-specific seam butchery techniques.

Our processor makes cuts like these (large PDF), which are ideal for making cured products.
